“Sanderson House (Oundle School) has been searching for sometime to give its pupils a full experience of high calibre cooking. Thierry Daugeron gave us exactly what we were looking for with our pupils. The day consisted of a resume on the History of French Cooking followed by preparing a sumptuous three-course meal with the pupils in small teams. The meal was then consumed with appropriate enthusiasm. His communication skills and manner are very impressive. He has a delightful light touch and his charming sense of humour is rarely far away. The pupils responded perfectly; indeed a number stated that this day was the best event in their entire time at Oundle. They were educated, entertained and fed with superb fare. I know a number of my colleagues in other boarding houses will now approach Thierry for similar events in their houses. As an introduction, Thierry demonstrated his knowledge and skill with a presentation of the history of French cuisine, its origins, development and traditional relevance in the kitchen today which provided an understanding of the forthcoming delights! His passion and enthusiasm for the subject is infectious and it’s easy to understand how he has built up such a loyal and devoted clientele.
Thierry’s reassuring guidance during the practical audience participation was stimulating and highly instructive whilst peppered with fun and ‘Daugeron’ humour providing even the most novice of ‘cooks’ the enthusiasm and excitement to create dishes for their fellow guests.
He demonstrated how, using simple but high quality ingredients, they could be transformed into mouth watering dishes presented with flair and panache.
This was a truly memorable evening for all who participated and we cannot praise Thierry highly enough for creating not only brilliant food but the ambience and atmosphere in which to savour the occasion.
